cheese stuffed jalapeño + chorizo tacos.

oaxaca stuffed roasted jalapeños with crispy chorizo, all tucked away in a fresh warm tortilla... need i say more?? 🤤🤤🤤
ingredients
8-10 tortillas
8-10 jalapeños
1-2 c oaxaca shredded cheese
1 lb chorizo
2-3 tbs oil
1 onion, diced
1/2 chopped cilantro

instructions
preheat oven to broil.
toss the whole jalapeños in 1 about a tablespoon of oil on a baking sheet.
place into the oven and broil for 10-15 minutes turning halfway get an even char.
while the pepper broil, heat a sauce pan to medium-high. once hot, add chorizo and break it down any large chunks. fry chorizo for about 5-8 minutes, until fully cooked through and crispy.
when the chorizo is finished, remove it from the pan, and set aside.
once the jalapeños are finished broiling, carefully remove blistered skins. then make a slit running from the top to the bottom of the pepper, open the jalapeño and scoop out the pith and seeds of each pepper.
grab about 2-3 pinches of the shredded cheese and stuff each jalapeño.
next place tortillas on a baking sheet and add one jalapeño to each tortilla. if there is any leftover cheese, evenly sprinkle it over all the jalapeños.
place the baking sheet back into the oven and broil on high and allow the cheese to melt until golden, about 2-3 minutes.
when finished, top with chorizo, onions and cilantro. enjoy! 😊
