vanilla almond french toast and blueberry compote

it’s monday, it took everything in me to get out of bed this morning. but then i started thinking this french toast, what a way to start off a monday morning break. it’s the french toast of dreams, and the only true reason to get out of bed today.




| ingredients |


french toast:


4 eggs

1/2 c heavy cream

3 tbs granulated sugar

2 tbs melted butter, plus more for cooking

1 tbs vanilla extract

1/2 tsp almond extract | optional |

zest of 1 orange

pinch of salt

6 slices of bread


blueberry compote:


4 tbs butter

juice + zest of 1 orange

1/4 c  brown sugar

1 oz bourbon

1/8 tsp almond extract | optional |

3 blueberries

french toast:

a large bowl, whisk together the eggs, cream, sugar, melted butter, extracts, orange zest and a pinch of salt.


dip the bread slices, one at a time, into the egg mixture and let soak for about 30 seconds, flipping halfway through. when you finish dipping each slice, place it on a baking sheet and let set for 3- 5 minutes.


in a large nonstick pan over medium heat, melt 1 tbs of butter. when it starts to bubble, add 2 bread slices and cook, turning once, until deep golden, about 3 minutes per side. repeat with the remaining bread slices, adding more butter to the pan as needed.


blueberry compote:


in a small saucepan over medium-low heat, melt the butter. add the orange juice, brown sugar, almond extract and stir to combine. cook, stirring occasionally, until the ingredients have to mixed together, about 3 minutes.


then add 2 1/2 cups of blueberries, bourbon and a pinch of salt. let cook on medium, stirring occasionally and until the berries start to burst. should take 8-10 minutes.


before serving, add remaining cup blueberries into the compote. transfer the french toast to a platter and top with hazelnut cream , blueberry compote and orange zest.


serve warm + enjoy ☺️
