Welcome to the start of my new series, breakfast around the Caribbean.
I’m not a fan of the typical breakfast foods, most days I don’t even eat until lunch. But I’ve been actively trying to change that. I figured I’d take you in the journey with me in find breakfast foods I’ll actually enjoy.
First up is Mangú Tres Golpes, Dominican Republic’s best known breakfast dish. It’s yummy mashed green plantains with fried salami, fried eggs and fried cheese finished with pickled onions… Are you drooling yet?

ingredients
mangú:
4 plantains
2 tsp salt
2 tbs butter
1 tsp
salt
1/4 water (from boiling plantains)
sides:
4 eggs
1 pack queso blanco or halloumi
2-4 tbs flour
1 lb dominican salami
oil as needed
pickled red onions:
1 large red onion, thinly sliced
3/4 c apple cider vinegar
1/4 c water
1 tsp salt
1 tbs sugar
instructions:
first, peel the plantains and cut into 4 pieces.
boil the plantains w until they are very tender. when plantains are ready, mash them with a fork until they are smooth. add cooking water as needed to keep the plantains moist. once smooth, add butter and combine. set aside.
next, add flour to a plate and lightly cover each slice of cheese. in a frying pan or skillet, add oil and fry over medium heat until golden.
slice the salami and add oil to a frying pan or skillet. fry the salami slice over medium heat until you get crispy edges.
in a pan, add oil , fry the eggs one at a time right before eating.
lastly, add vinegar, water, salt and sugar in a sauce pan bring to a simmer on medium-high heat.
place the sliced onions in a jar or container, pour the hot vinegar mixture over the onions. screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture. let sit for 20-30mins.
assemble your plate and enjoy.
