gooey mac and cheese.


ingredients

2 c uncooked elbow macaroni

5 tbs salted butter

3 tbs all purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp dry mustard

4 oz cream cheese

1 c shredded mild cheddar cheese

1 c shredded smoked gouda cheese

2 c whole milk

salt and pepper to taste


instructions


cook your pasta according to the directions on the package, set side.


melt butter in a large pot on medium heat.


add in your flour, mustard, garlic and onion,

using a whisk quickly to make a roux until the combined and looks like cookies dough. let cook for 1 minute or so and then add 1/2 cup

of whole milk at a time and begin stirring. It should thicken up pretty quickly.


once your sauce starts to thicken, add in the cream cheese and gradually add in remaining 1 and 1/2 cups of milk. continuously stirring as you go, do not let this mixture begin to boil! stir for about 5-7 minutes.


once creamy, using a rubber spatula, fold in cheese until the cheese is fully melted and combined, then add macaroni noodles and stir gently.


add in salt and pepper to taste, and enjoy 😊
